Awesome Curry Sauce for Curry Mee :D

I know, I know, self praise is no praise at all, but seriously, i think this is my most successful dish ever.... besides the ikan bilis potato thingie and my popo's chili fish and my boiled soup and... oh... actually i have quite a few good dishes! :D

Anyways, what happened was, i was, as usual, stuck in the bloody jam on Sprint Hwy on the way back from work and my mind started to wander.... what's for dinner? then i suddenly missed the curry mee in Kluang. Kluang's curry mee is very different from KL ones. i dunno how to explain it, but really different.... then i started to recall the taste and then, i dont know, suddenly i *think* I know how to cook the gravy! :D

i have been contemplating how to write out the recipe as most of the chili pastes are ready made by me and stored in the fridge coz i just love my chilies! :D so i've decided to give you the REALLY from scratch recipe :D (if you have all the ready made pastes - note the plural, yes, pastes, different kinds of chilies - the process will be MUCH faster, infact, this dish took me less than 30mins to kau tim! that's very fast in my standard coz i m a slow cooker ;))


Handful of Red cili padi
Handful of Red cili
Cili giling
Shallots
Garlic
Ginger
Belacan
Sugar
Curry leaves*
Serai*
Dried shrimps (soaked)
Chicken powder
2 pkts coconut milk
water
salt to taste
Taufu pok
Vege of your choice (i used chinese cabbage becoz i have stock :D)

(ya, curry mee without curry powder ;))

1) toast the belacan on dry pan until it's dried and crumbly

2) Blend red chili padi, red chili, ginger, shalots, garlic, dried shrimps, sugar, belacan and chicken powder together.

3) heat up the wok with oil (no need to wash that wok if you used it to toast the belacan before hand), fry serai and curry leaves, throw in all the blended stuffs, faster open the window to let the chili asap fly out, fry fry fry, until you think it's wangi (about 5-10mins in high heat). Throw in the santan and water, throw in the vege and taufu pok and bring it to a boil. Taste the curry, if not salty, add salt. if too thick, add water. if add too much water and became diluted, add a spoonful of condense milk and boil boil boil. anyway, if you boil long enough, it will be thickened again one :D

*i didnt use this last nite...but i figure it will taste even better with these ;)

The curry is ready!

Boil the noodles of your choice in a separate pot, drain, dump in a bowl, pour the curry sauce over the noodles and voila! curry mee is served!


If you loves seeham and charsiew in your curry mee, add the seeham and charsiew on your noodles before pouring the boiling hot curry over it :D

Ok....now, wanna know how i REALLY made mine last nite? ;)

1 big spoon of my potent sambal belacan (popo's recipe)
1 big spoon of my failed chicken rice chili (i thought i knew how to make them)
1 big spoon of ready made dried shrimp sambal which you can get in market
1 big spoon of cili giling
chopped bacon (totally useless, in retrospect)
santan
water
chinese cabbage
taufu pok
fishballs
pork balls

Sambal belacan
shallots, red cili padi, red cili, toasted belacan, sugar. - blend it all up and can keep in the fridge

Failed chicken rice chili
ginger, garlic, red cili padi, red cili, salt, sugar, chicken powder - blend it all up and can keep in fridge

Curry sauce
fry the chopped bacon on dry pan until all the oil keluar, add more oil, when oil is hot, throw in all the chili pastes (seriously, faster run to the window to open it all up... the fume makes you cough and sneeze!!), fry fry fry until wangi, add santan, add hot water, add chinese cabbage, taufu pok, fish balls and pork balls. boil it till the cabbage is soft. stir occasionally. if the mixture is too thick, add water. add salt if not salty enough. add chicken powder if you feel something is missing :D if too diluted, add one spoonful of condense milk :D boil boil boil

oh, u can omit the bacon. :D totally useless...cannot taste the porkiness after frying the chilies :D can just use normal oil ;)

Simple!!! :D

the only things missing was seeham, charsiew, fuchuk and that fuchuk roll thingie that the kluang curry mee stalls put :P oh oh and taugeh!! :D

will attempt to make it again next round with all the works! :D

Bacon & Egg sandwich

Been bringing bekal to work 2nd day in a row and i m really getting used to it :D Today's lunch was Bacon, Eggs, Cheese, Baby Romaine Salad, Onion, Cucumber and Thousand island sauce on italian herb bread drizzled in olive oil :D

Sounds canggih leh??? :D It's surprisingly super delicious!! :D


Here's the simple recipe :D

Half a loaf of Italian Herbs Bread (found it in Jaya Grocer)
3 rashes of bacon
2 eggs (beaten)
2 slices of cheese
Some sliced onions
3 slices of cucumber
4 pieces of baby romaine salad
1 tbsp or less olive oil
Thousand Island sauce

1. place bacon slices on cold dry frying pan. turn on heat to low and slowly turn the bacon every once in a while until crispy brown. remove from heat and place it on top of kitchen towel to drain excess fat

2. pour in the beaten eggs into the porky oil filled pan and fry the egg according to your likes. remove from heat.

3. slice open the half of the bread (you can keep the other half or double the recipe so that you can give it to your favourite cousin as well ;)), drizzle olive oil on both sides of the bread (so that the thousand island sauce and vege moisture will not seep so much into the bread.

4. Place cheese on both sides of the bread (dual purpose, for taste and same reason as olive oil). Next, place cucumber and then bacon + eggs and finally the vege.

5. Pour whatever amount of thousand island sauce on the vege. and voila! :D

It's like making your own subway!! :D

Simple Bee Hoon Soup

I've been diligently cooking almost every night after work. coz:

A) i love my cooking
B) wanna save money (although i dont see how is that possible since i always ended up going to supermarket EVERY NIGHT to get more ingredients for the stuffs that i thought of cooking whilst driving home)
C) i am in the cooking mood again

Anyways, last nite minger's nose decided to take a vacation and ran away. So i told her we shall eat simple and healthy then! :D

Anyways, here are the recipe :D


Ingredients

2 handful of bee hoon
200grams prawns meat (keep the shells, tails and head)
8 pork balls
8 fish balls
2 table spoons of marinated chicken slices*
1/4 chinese cabbage
1 teaspoon of tong choy

Marinated chicken

Chicken fillet
Sesame Seed Oil
Shao xin win
Oyster sauce
Soy sauce
Garlic Powder
Pepper powder
Tiny pinch of 5 spiced powder

Soup Base

500ml water
Prawn shells, tails & heads
2 thumbs lenght ginger, sliced.
a pinch of chicken powder


A) Marinating the chicken

Slice the chicken to the desired shapes / size. dump in all the ingredients and marinate, set a side for minimum 30mins to ensure that the chicken is fully marinated. I marinated mine few days before :P

B) Soup base

Stuff the prawn shells, tails and heads and ginger slices into disposable teabags. Once the pot of water (you measure yourself, 2 ppl need how much soup, i boiled 2 bowls of water) is boiling, throw in the stuffed goodies into the boiling water and let it simmer. Throw in the chinese cabbage as well if you are like Minger and I who loves our chinese cabbage super cooked until the white part looks a little translucent. If not, add the cabbage later. This cabbage makes the soup sweeter also :D once you are happy with the soup, you can start cooking the rest.

C) Beehoon

Cook the bee hoon on a seperate pot, drained.

Dump in the chicken, balls & prawns into the soup 5 minutes before you wanna eat. once the meats are all cooked, ladle them up on the bee hoon and garnish it with fried garlic and tong choy :D

Ok, the picture on top dont have tong choy, i know.. coz i damn forgetful... minger was lamenting that the soup wasn't salty enough but i find it ok... then when we almost finish that time only i remember the tong choy! :P so we added the tong choy into the noodles, boiled the remaining soup in the pot and pour it over the tong choy. :D

and that, my kawan kawan, is how i cook my bee hoon soup. :D

Tonite's menu: braised tung ku, stir fry broccoli with marinated chicken and an egg dish :D

Updates with pic!

contrary to what some of you believe, no, the lack of updates is not because i been kidnapped by that Psychotic Ex BF.

anyways, so much to blog about! :D Went to watch West Side Story on Saturday. It was an atas event, altho they didnt serve champagne (disappointed!) Anyway, being the kiasu us, we reached there super early. so early until the matinee show havent even end =.=" then that silly LM suggested we go to PWTC to look see look see the dunno what beauty fair. we went there, it was damn empty... only to realized that the fair is actually at KLCC =.=" and since we have already parked the car, it's stupid to immediately leave coz we still have to pay the RM3.00 parking anyways. So we like so hai like that, went to the lobby and sat at the sofa and camwhore a bit. smoked a stick of ciggie, went to the toilet and then head back to Istana Budaya.

we were the 1st one to collect the ticket from the BMW counter. We each got a door gift containing a leather bound note pad, an original CD and program book :D They catered the food from Westin KL. Presentation wise nice la... but the taste, so so only. But we were damn full by the time we went down to watch the musical :D

RM 500.00 tix at a discounted price of RM338.00, FOC CD and Program Book at the retail price of RM80.00 is a great deal! :D

Some potato burger thingie (not nice) and honey glazed drummets (damn nice but super hard to eat when we need to pretend to be atas) these are the only food pic i took coz after that i kept the camera in the bag and too malas to take it out :D

The musical is really really impressive. I love the way they dance! So full of energy! I especially love the Dance at the gym scene and also the part where everyone came out and sang 3 different songs (i forgotten the scene - but i think it's the second half). It's damn hard to actually sing a song when there are 2 other groups of ppl singing other songs lor :D And Maria is really really pretty :D Drank too much drink during the cocktail session. so when the interval started, i rushed out to the toilet... thank goodness i rushed. coz when i came out from the toilet, the queue was damn long! :D was tempted to go back to the cocktail area to grab some drinks and snacks, but cannot la... later wanna pee how? :D

After the musical, we headed to PBD to look for the humble chef... but alas! he aint around :( We then headed over to Ronnie's place for his ROM party. But when we reach there, everyone left alre. too some courtesy snacks and catch up with Ronnie a bit and then balik. By the time we reach home it was alre 2ish 3.

Next morning, LM, Ah See and i went over to Sg. Buloh for the awesome dim sum. i was super hungry and whacked damn a lot :D actually, whacked too much la.. until we needed to go to TCM to walk walk abit to digest. after walking and stonning a bit, LM sent me home. Slept a bit then woke up to watch some dvd and then went out supper with the small cow.

and that, my kawan kawan, is why i was so busy over the weekend.

Oh oh... i found out i havent been updating a lot of pictures that i've taken eons ago. :P (mostly food tho)

Sometime in February, i've experimented in frying prawns and apparently the small cow and water dog loves it... here's the so called recipe:

You will need some ginger, onions, chili padi and curry leaves

Prawns! (duh!), removed the legs and de-veined it

1st, fry the ginger, onion, cili padi and curry leaves until fragrance. Then dump in the prawns. Fry until you are happy, add in the condiments like chinese cooking wine, soy sauce, dark soy sauce, oyster sauce and a dash of sugar.

Voila! Ya.. i know, a bit the too dark.. but it's damn yummy! :D

Then apparently, the next day, i cooked braised shitake mushroom with ming karn and served it with noodles....

fuck la... looking at this now makes me damn hungry... =.="

Then, one nite, cowie decided to turn halal and start wearing a tudung =.="

conversation with small cow...

... as most of you know, small cow is currently staying with me for a few months whilst her personal issues are being sorted out. recently, due to the stupid hot weather, small cow moved into my room to sleep in the aircon-ed room.

and usually before we sleep (she is working afternoon shift now so we sleep almost the same time), we will talk or twitter or surfnet or play games on the phone whilst chatting.

so small cow was telling me about she telling Guy Ash about my dream (i dreamt recently that small cow and Guy Ash got 2 sets of twins :D) and then dont know how we change the subject to what if i suddenly get married (gasp!) and have kids (shudders!)? will she be the godmama to my kids? :D and she kept quiet for a looooong time.... then suddenly she said: "oookay lor... (in the most reluctant tone)... but i dont wanna take care of them one ah" and i went "i also dont want you to take care of them la!" and then she went all hurt and ask me why?? and i told her "if you babysit them, hell will break lose lor. i can imagine me coming home from my date nite with my hubby and see my children bouncing from wall to wall super hyper" and she started to giggle non stop and ask "why ah?" and i told her la, i can imagine her feeding my kids with all kind of sugary stuffs like a cupful of sugar, lollipops, cotton candy, marshmallows etc etc... and we started to laughed non stop over all kind of silly situations. and i told her, if i have kids, i am gonna feel my kids with Sponge Bob Square Pants everyday to make them stupid :D

yes, i super fail in parenting :D

and yes, it's really a gasping moment that i m actually entertaining thoughts of marriage and kids!

and no, we are not sharing the same bed ah, she pulled the mattress in so now my room is basically covered with mattresses :D

oh and yea, i just found out last nite that i am a total failure when it comes to cooking hard boiled eggs. :D i can cook dishes and rice and what nots and when it comes to hard boiled eggs, i failed :D but at the end the end result of the failed egg is pretty nice la... here's big cow's way of cooking hard boiled eggs:

fill the pot with water in masuk 2 eggs and boil it for a few minutes, then, feeling over confident that the eggs are cooked (my logic is, eggs cook damn fast one ma, no meh?), remove the pot from the stove and pour out the water and run the eggs under cold water. use a spoon to slowly crack the shells. by this time, each crack will go toing-toing-toing. you will suspect that the eggs are not cooked yet. so you will fill up the pot with water again and reboil the eggs. by this time, you will get fed up and decided to take a ciggie break. then, your guardian angel in the form of small cow will come to your rescue and watch the eggs for you. after the ciggie break, you decided to fuck care and just proceed to remove the eggs and then to your amazement, the eggs is cooked perfectly! the yolk is not overly cooked to the extend of being too powdery and the whites are super toing-ing :D nais! :D

and that, my friends, is how you cook hard boiled eggs, big cow way =.="

oh oh... the night before, whilst small cow were bathing, she suddenly heard the crazy next door neighbour went: nnggggggggggg haaarrrrniiiiieeeeeeeeee!!!!!!!!!!! again! :D she stopped doing anything to eavesdrops, which i think is damn funny lor... :D so sampat...

oh oh... i also ask her about her and guy ash. i feel like macam there's some sparks like that one leh... then she told me let nature takes it's course. so i started to ask her how would she know if he likes her or not leh, and she went, "i dont know" and then i suddenly burst into song "How does she knows, he loves her? How does she knows she's yours (how does she knows that you love her?)" ala Enchanted and then we both suddenly burst into laughter. i just suddenly feel like singing that mah... i think i watch too much musical la.... lol. it's like i can burst into songs any moment like that one.... :D

cny updates

as mentioned previously, i was cooking quite a bit during the long weekend. but i only managed to take pic of the 1st day's cooking. why? 1st day cook, rakus mah, so mah take pic lor... actually... the 2nd day and 3rd day also wanna take pic one... but too kancheong until forgotten =.="

so... anyway, 1st day cooked crab meat fried rice. :D it's nice... but i think it's not enough wok hei lor...

Here's the recipe:

Red onion, cili api, eggs, rice (duh!), sweet corn kernels (canned) and crab meat (canned)

1. Sweat the onions and cili api
2. add in the crab meat and fry somemore
3. add the sweet corn and fry somemore
4. add rice and mix well
5. add pepper powder, soya sauce and oyster sauce to taste
6. pour in the beaten eggs, turn on high heat and fry at a fast speed OR just fry the eggs seperately only add the eggs into the rice mixture.

Kautim! crab meat fried rice! :D

Anyways, as mentioned previously, the 1st day of cny, went dinner with the bosses and the ang moh @ South Pacific. After dinner, the boss decided to play more tour guide and brought the ang mo to take pix of klcc. and since i've already hopped into their car, i might as well take lor. here are the snap shots:

Anyway, after snapping pix, the bosses and i started to talk about durians and that pique the ang moh's curiosity. and it's hard for us to describe the taste except that you either love it or hate it. there's no two ways about it. :D anyway, since the nearest durian can be found @ alor, the boss drove us to alor to show the ang moh. fucking expensive leh, but since the boss is paying, fuck care la. :P the ang moh surprisingly loves it :D (see la, small cow, u lose to ang moh liao)

After durian eating, we went pub hopping. but it was too hot to hop too much. so after 2 rounds, the boss decided to go HRC. coz the ang moh stayed at Concorde.

Some non alcoholic drink that's fucking sour. i was so bored, i decided to play with my camera. and ya, that's the ang moh at the background.

Erm... i think i dont have anymore pix to share liao. i think i damn 'sat pai' lor... the camera is in my bag all the time but i always either no mood to take pix or forgotten to take pix =.="

Prawn & Chicken Soup Noodle aka 'Ai Xin' Noodles

... i finally bought gas. no actually, i finally have time to buy gas. The thing is, it's a huge hassle to buy gas over at my place. 1st, you will need to pay for the gas 1st. Then, you will need to spend the whole day at home waiting for them to deliver when they feel like delivering. So, i was gas less for about a year :D and then on Saturday, i decided that i wanna good something on Sunday and CNY. so i went to pay for the gas. only to be informed that they will deliver to my place on Sunday morning. So came Sunday morning, they didnt come. Small Cow went over to the shop and ask them and they tell her 3-4ish will come. so i camped outside at the living room doing nothing.... for a few hours. come 3.30pm, they didnt come. i called them up to screw them and they tell me 6pm only deliver to me =.=" damn kao tulan... wasted the whole day rotting at home doing nothing! finally at 6.15pm, the gas man came. mad happy. so i turn on the gas stove for the sake of turning it on. it was then too late to go out and buy food to cook alre. :(.

So, yesterday, i damn bo kam buan. Sudah ada gas, tapi tak sempat masak! Anyway, on the way back, i was thinking, i wanna cook, but too lazy to cook dishes and rice - too much hassle la... then i remembered someone taught me how to cook maggi with a twist. and i've decided to cook that. and decided to improvise :D here are sort of the recipe (i do agak-ration so i tak tau how many grams/teaspoon/tablespoon - follow your instinct la :D)

Noodles!

Prawns! De-shelled, de-veined and beheaded :D Keep the head to cook in the soup to make the soup sweeter :D

Diced chicken! Bought some chicken fillet, cut it to bite size, marinate it with soy sauce, oyster sauce, sesame oil, white pepper powder and chopped garlic (to get rid of the gamy smell / taste that sometimes chicken has)

Vege! To 'balance' the meal :D You can use any vege, i wanted to use the white chinese cabbage but the shop i bought from dont wanna sell me 1/4. so use this 'siew pak choy' instead :D Next to it is chopped cili api and garlic - eat noodles must have chili one leh.. if not macam lack of something :D

Soup base: Chicken cubes! :D Forgive me for such a small pic, i forgotten to take a pic of it so i googled it :D Anyway, bring a pot of 500ml water to a boil, add in 1 cube of chicken cube, a dollop of oyster sauce, a few drops of sesame oil and the prawn heads. boil until you think you are satisfied that the soup is ready (i boil about 6mins - coz that's how long it takes me to smoke a stick of ciggies :D), pour in the chicken meat (not all la, i used half of it for my 1 bowl of noodles), let it cook for awhile. When you think the chicken is about to cook, add in the prawn and vege and cook for another 1 or 2 mins. Pour it into a bowl when the soup is ready.

Noodles: bring a pot of water to a boil, throw in the noodle (i used 1 square per bowl) and cook until soft. Drain the noodles and pour it into the soup.

Voila! the noodle is ready! :D

It's seriously yummy lor... :D go ask small cow :D Thank goodness i enjoy eating my own cooking :D i know a lot of ppl who enjoy cooking but dont enjoy eating :D wait. i m most of the time like that too... but i was too hungry la :D

go try it! seriously nice and 'almost' healthy ;)
